DEF

[A] discolouration on the germ end of kernels of grain caused by numerous species of fungi and bacteria.

CONT

Blackpoint is found in barley, triticale and wheat, although there is no separate tolerance defined for blackpoint in barley. Kernels are susceptible during periods of rainfall or humidity above 90%-particularly during filling or maturation. Blackpoint does not usually reduce yields, but it can reduce grade and quality. Blackpoint is especially troublesome on durum wheat because black specks can appear in the semolina.

DEF

Downy Mildew of Cabbage. Caused by the fungus Peronospora parasitica. Damage occurs mostly to young plants or to exposed leaves of heading plants.

CONT

The fungus causing downy mildew of cabbage also attacks other crucifers, such as cauliflower, collards, Chinese cabbage, Brussels sprouts, broccoli, kale, and kohlrabi... The first symptoms of downy mildew are the formation of black specks and yellow-brown spots on the upper leaf surface, accompanied by the development of a fluffy mold growth on the lower surface. Young leaves may fall off when infected, and on older leaves, the spots may coalesce, producing large, sunken, tan spots. The disease can attack young seedlings or plants that have already headed. On older cabbage plants, the disease produces dark, sunken spots, which may appear purplish, on the head or wrapper leaves.

Yellow Sigatoka. The first symptom of the disease is the appearance of yellow-green specks in the lower surface of the third and fourth youngest open leaf. The specks elongate and expand into clearly visible brown streaks. As the streaks further increase in size, they become elliptical brown spots surrounded by a yellow halo that separate the spot from the normal green leaf tissue. When the spots become fully developed, the central areas turn gray, which eventually are surrounded by dark brown or black margin with yellow halo. The spots group together to form large areas of light brown, dried-up leaf tissues. This leads to premature dying of the leaves.

OBS

Symptoms of yellow Sigatoka ... typically develop more slowly than symptoms of black Sigatoka ...

CONT

Floaters are entoptic images of opacities in the vitreous. Entoptic image is a visual perception that is produced by structures within the eye-in this case vitreous opacities. Patients complain of small specks or dots that can be seen against a bright background such as a diffusely illuminated wall or the blue sky. Sometimes fine dark lines in amorphous mass-like small branching twigs-are seen. These floaters move around and are also called ’muscae volitantes’ because they seem to dart about like flies as the eye is moved.

OBS

The vitreous is a jelly like substance which changes consistency as we age. This change causes the vitreous to separate from the retina. When this happens, the back of the vitreous can be seen as a floater. Most people describe this as a spider web or floating speck. High myopia and trauma can make vitreous separations occur earlier.

Although one of the primary aims in durum wheat milling is to produce a speck-free product, bran specks in the final product are unavoidable. If wheat is improperly cleaned, foreign material such as earth pellets or insect fragments may also appear as black specks; kernels damaged by severe smudge, mildew, black point or ergot will also cause speckiness. Since a specky product is undesirable, one test for checking the efficiency of milling is the determination of number of specks per unit area of semolina. The definition of "speck" is not clear cut and differentiation must be made between bran specks and other dark or black specks. Insufficient cleaning of wheat, presence of damaged kernels in low grade wheats, and inefficient purification contribute to speckiness. Normally, the number of specks is reported as specks per 100 square centimetres.

CONT

Criteria for judging quality. Flour color : A very simple way to determine color differences in different batches of flour is to look at the color of different types of flour under a sheet of glass. This can be done with more than one flour at a time. This method not only facilitates a comparison of the whiteness of different flours but allows for an inspection for impurities. The flour should have a... "perfectly regular consistency and not contain any specks". This obviously does not pertain to mixed grain or to other than white flours.

CONT
