Egg stability is economically important for the whole egg production industry. Egg shell strength and egg white quality have both major effects on egg stability. They are quantitative traits where the observed phenotype is due to the effect of many quantitative trait loci (QTL) and environmental factors. Depuis de nombreuses années, des approches nutritionnelles, génétiques et d’élevage ont été proposées pour améliorer la solidité de la coquille et par conséquent, limiter le risque de toxi-infection alimentaire et la perte économique associés à la casse des œufs. Ces travaux ont évité toute dérive de la qualité de la coquille au fil des années, malgré une augmentation considérable de la production d’œufs de poule. Toutefois l'incidence globale du nombre d’œufs déclassés reste important(8 %). Aussi à Nouzilly, au sein de l'équipe qualité des produits avicoles de la station de recherches avicoles, nous avons mis en place depuis une dizaine d’années, un programme d’étude : les mécanismes de formation de la coquille afin de tester l'hypothèse d’un rôle de la matrice organique dans la fabrication de la coquille. At the end of 1993, the UI Account showed a cumulative deficit of approximately $6 billion. In December 1993, the Minister of HRD announced a premium rate for 1994 of $3.07 for every $100 of insurable earnings. This was the minimum premium rate required by law.
