indole : Structure de base du tryptophane et de nombreuses autres substances biochimiques, se composant d'un noyau benzénique accolé à un noyau pyrrolique. L'indole se forme notamment dans le tube digestif à partir de la dégradation microbienne du tryptophane. Les crucifères (chou de Bruxelles) renferment diverses substances indoliques (3-méthanol indole) qui activent les Aryl Hydrocarbon Hydroxylases intestinales et contribuent à la dégradation du Benzo(a)pyrène.

Glucosinolate : Terminologie moderne pour désigner les thioglucosides caractérisés par la formule : bêta-glucose. Les plus importants sont la progoîtrine, la sinigrine, la gluconapine, la sinalbine, la glucopaéoline, et la glucobrassicine, mais plus de 70 molécules de ce type - responsable d'une saveur piquante - sont décelées dans différentes parties anatomiques des crucifères (choux divers, navet, colza, moutarde, rave, etc.
